Never-go-hungry omelet

October 4, 2009

Welcome to the first cooking lesson on my blog. I teach cooking for my profession so you can trust me to help you to become an accomplished cook.

My aim for you is that you enjoy the process of making the dishes and are ok with making mistakes which I believe is part of the learning process.

So here we go, please let me know if you succeed or not, I am also happy if you would like a particular recipe just ask and I will try to include it.

For one person crack  three free range eggs in a bowl, with a fork mix well, add a small splash of milk and five grinds of pepper and salt.

Heat one teaspoon of good quality butter, (not margarine because it tastes yuk!) over medium heat in a pan.

Heat the butter till it starts to froth, about twenty seconds, quickly pour in your egg mixture.

With a fork gently move the edges of the set omelet inwards and let the raw mixture move outwards, be careful or you will have scrambled eggs.

When your omelet is starting to set in the middle pop a lid over the pan and let the omelet set for about one minute, check the bottom, it should be light golden.

Be careful not to overcook your fluffy golden masterpiece.

Now it gets exciting, you can pop some grated cheese, sweet chili sauce, chopped parsley, sauted mushrooms, cubed tomato on your omelet bring one edge right over the top and tip it onto your plate, the idea being it will look like a huge sausage roll.

Serve with toast, enjoy :)
